AED 200 Chef’s Selection Menu: 4-course meal, 8 seafood varieties, and 11 dishes
(MENAFN- PR HUB) Dubai, the UAE – October 10, 2025]: John Dory Seafood Market unveils its new Chef’s Selection Menu, running from October 10 2025, at The Market Island, Dubai Festival City Mall. For AED 200 per person, including drinks, diners can enjoy a thoughtfully curated four-course meal that showcases eight different types of seafood across eleven carefully prepared dishes.
As the region’s first sustainable head-to-tail seafood ecosystem, John Dory remains committed to freshness and quality, with a focus on reducing waste by using every part of the fish.
Head Chef Maxim Gurin explained, “We wanted to create a tasting menu that really tells the story of what John Dory stands for. Our Chef’s Selection Menu lets us showcase premium products using our signature open-fire and dry-ageing techniques to enhance natural flavours while ensuring minimal waste.”
The Chef’s Selection Men, featuring two sets, begins with a choice of a 3-in-1 cold starter plate, which includes hummus with cold-smoked salmon, mutabal with king shrimp and halibut, and muhammara with cold-smoked halibut. Alternatively, visitors can opt for a 2-in-1 pairing of salmon tartare and wild seabass ceviche.
For hot starters, guests may choose baked Fine de Claire oysters or King Crab croquettes served with lightly salted cucumber, tobiko, and sriracha mayo. Mains include a rich Sea Bass Curry with coconut milk and cashews, or a delicate Miso Black Cod paired with fresh spinach. The meal concludes with an Orange Cake or Brownie Tart for dessert.
