Matthew Jones, Founder of Bread Ahead, Talks Gastronomy, Donuts, Expansion to Middle East

(MENAFN) Matthew Jones’ passion for cooking started at a very young age. Having spent 15 years in Michelin-starred restaurants, he founded Bread Ahead, a London-based artisan bakery and school, which is known for its delicious sourdough bread, pastries, and famous donuts. Jones’ donuts are unlike any others, focused on gastronomy and flavors, and the bakery is famous for its “float donut” - a vanilla, pistachio, chocolate, and praline-filled donut with a white steamed line at the center, called the “band of truth.”

Jones believes that cooking is not just about the tangible ingredients, but how you work the dough, “you give something of yourself when you bake,” he says. Bread Ahead has now opened branches in Jeddah and Dubai, where Jones loves the opportunities available in hospitality and the food industry.

In an interview with Arab News, Jones discusses his passion for cooking and shares a delicious cinnamon bun recipe. He also talks about the discipline required in the kitchen and the challenges of working in the Michelin world. Despite his success, Jones remains a humble and passionate chef, who will always see the kitchen as his home.
