Reflecting the restaurant’s ethos — “Every Bite Tells a Story” — the Diwali collection unfolds as an immersive journey through India’s culinary heritage, reimagined with quiet sophistication. Each course, from the first pour of fragrant Khabuche Ka Shorba to the final crackle of Masala Chai Crème Brûlée, embodies the festival’s spirit of warmth, connection, and abundance.
“Diwali, for us, is about more than light — it’s about reflection, grace, and shared joy,” says Chef Hemant Oberoi. “We’ve taken India’s celebratory flavours and refined them for Dubai’s modern table — each dish is rooted in tradition yet elevated with restraint.”
The vegetarian and non-vegetarian Diwali menus highlight India’s diverse palate:
• Pani Puri (Vodka), Khurmani Tikki Chaat, and Strawberry Dahi Bhalla set a playful tone,
• Flame-led kebabs like Lal Mirch Paneer Tikka and Bhatti Prawns reflect the art of patience,
• Heritage mains — Achari Lal Mirch Ka Gosht, Masaledar Bharwan Subzi, Hari Mirch Pulao — balance nostalgia and nuance,
• Desserts such as Kesar Malpua with Rabdi and Laddoo Sushi close the experience in golden warmth.
Each set menu includes an Indikaya Signature Festive Drink, designed to complement the season’s depth of flavour.
