ADEN, June 7 (KUNA) -- Western provinces of the Yemeni city of Taiz are famous for producing municipal cheese, which is prepared in a traditional way without the addition of any manufactured materials or preservatives.

It is a source of income for thousands of Yemenis who have inherited or are selling it.
The cheese is prepared by boiling goat's milk or cows, mixed with a natural substance extracted from small goats that feed on milk only and helps to precipitate the cheese and separate it from water.
The validity of the cheese varies depending on the method of preparation. For salty cheese, it is valid for more than a month to be marketed and sold in the local markets. (end) sns.aa
