I was born and raised in the Bay Area by my grandparents. My fondest memories growing up are of my grandmother Cheryl baking in the kitchen. She would always let me work right by her side.
I knew at the age of 9 that I loved to cook, bake and get creative.
My career launched in marketing in advertising when I was 21. I worked in Silicon Valley for 10 years with some of the most amazing businesses and restaurant owners. All in which inspired me to believe I could do it on my own. I learned what worked and what didn't. I saw restaurants open without a good plan and close within a year. I also saw the successful side to the restaurant industry.
After a major car accident that almost left me paralyzed, I decided it was time to take control, follow my heart's desire and go to culinary school. I graduated delivering the speech at our graduation. I remember my words of "its never too late to go back to school." I believe and live by the motto now, "Do what you love, Love what you do." I am doing what I love and it shows in every dish and every cannoli I make!

I started Holy Cannoli! in February 2012. I was fresh out of culinary school and knew that I didn't want to struggle working for other companies. I started with just cannoli, cupcakes and cake orders. I worked at other restaurants and helped open a few as well. Through all this, I took in many skills including how to cater. Once I felt comfortable enough I changed my health permit to a caterer's license and started small and built up my clientele and the number of people I could accommodate. The challenge up to this point has been working in a shared kitchen, and having to block my time slots. I have had to turn down jobs due to the kitchen already being used. I set a goal to buy a food truck and I have accomplished that. I also set out to find my own kitchen, in which I just moved into. Now I can continue to grow an amazing pace! I'm so proud that I have done everything that I have set out to do. I have paid for everything in full and I have no business debt. When this loan comes in it will help me to hire a few full time employees which is exciting. My daughter and 3-4 other people work for me now, only as needed.
What is the purpose of this loan?
This loan will provide us with the additional money we need in order to finish our food truck. We have been growing our business over the past few years and have just secured a new kitchen. We plan to open on April 1st with our food truck parked in front as our "storefront". We are in a very popular location with high traffic leading to the freeway everyday. We need a fryer inside the kitchen for our cannoli. We currently use a small counter size fryer and the large double fryer will allow for us to keep up with the demand that we will have once were open. We have our own coffee brand and make a cold brew with it. We also make Italian sodas with fresh juices. We need a freezer and ice machine for both of these items. The refrigeration system is not in compliance with the health department. We need to change it out and also add a generator that is mounted within. These are the two things we need in the truck in order to sell out of it. Up to this point we only use it for catering. These items add up to $10,500 exactly. Up to this point I have paid for everything by myself and I have no debt! These items will take Holy Cannoli! to the next level by allowing us to sell out of the food truck daily, and proving a storefront for people to come to purchase breakfast, lunch, coffee and cannoli. Up to this point we have only been doing catering. This is going to increase business significantly because we will have daily sales generating at minimum $1000 per day.
